Sonia (mother of Layla and Aisha): OK girls, wash your hands before we do food prep.
Aisha: Wash my hands, wash my hands.
Sonia: That’s the way. We dry our hands very well. Well done. So, Layla, what’s the recipe for tzatziki in the book?
Layla: It says one cucumber, and half a cup of yoghurt and a garlic.
Sonia: A clove of garlic that we’re going to crush. Does it say crushed?
Layla: Yes.
Sonia: Yes? Fantastic. So we’ve got our cucumber. That’s from your grandfather’s garden. We’re very lucky that we can pick cucumber from your grandfather’s garden. Read what we need to do first.
Layla: You need to get a cucumber.
Sonia: Yes, so we’ve got our cucumber. So we need to cut the cucumber in half. Now I need to get you a spoon because what’s the next?
Layla: It says, and scoop out the seeds.
Sonia: And we take out the seeds just because we’re mixing it up into a tzatziki so we don’t want it to be watery. And there you go, all the seeds. Yes good girl. Well done. That’s the way. Dig in there. So you’re going to dig it all out. Now look at yours and look at that one. Well done, great job.
Layla: You need to leave the skin on.
Sonia: OK, so we’ve left the skin on.
Layla: And grate into a colander.
Sonia: OK, so instead of grating we’re just going to do a chop. OK.
Layla: It says stir the yoghurt and the garlic.
Sonia: So, yes, half a cup of yoghurt. Good girl, into the bowl and there we go. We’ve got some cucumber that we can have tomorrow for lunch. Now, to peel a garlic – what do we do? We put the knife down like that. So it makes it very easy to peel. So you can even peel that one. Put the garlic into there and then we just crush it. Big muscles. And it should come out and get it off the bottom. And then we mix the cucumber and then we give it a mix. All right, lovely. That should be enough. Layla: They look kind of the same.
Sonia: There’s yours, there’s yours and there’s mine and we dip it in. What do you think?
